Chili Time

First, and quickly, don’t forget to reset your clocks.  The burpee rule still applies on the Monday after the time change!

We may actually have a few cold days of winter left.  If you’re like me, nothing sounds better than a big bowl of chili on a cold day.  Sue is hooking us up with another awesome paleo recipe:

Rotel Red (Chili)

1 1/2 pounds lean ground beef  I used Costco’s organic grass fed ground beef
1/2 chopped onion
10 oz. can tomatoes with green chilies, jalepenos, or just diced tomatoes
1 cup pumpkin puree
6 oz. can of tomato paste
2 cups water or beef broth I used Trader Joes organic beef broth
1 1/2 tbsp chili powder
1 tbsp cumin
1 tbsp cocoa powder
1 tsp onion powder
1 tsp powdered Mexican oregano
1/2 tsp salt or to taste

Chop onion. Brown onion and beef in a dutch oven. Drain fat if not using a lean grind of beef. Stir in tomatoes, pumpkin and tomato paste. Slowly add the can of water or beef broth while stirring. Add spices and cocoa. Simmer at least 30 minutes.  Check salt and serve.

Sue – I added chopped red bell peppers with the chopped onions, cayenne red pepper and simmered it for several hours instead of 30 minutes. Mmmm – chili deliciousness.

Smoky Pulled Pork Lettuce Wraps

Sue Konold in all of her Paleo Badass-ness has now taken to Paleo cooking from scratch!  Forget Paleo websites and cookbooks, she is whipping up awesome recipes off the top of her head!  Here is her latest delicacy, Smoky Pulled Pork Lettuce Wraps:

Smoky Pulled Pork
Pork butt or shoulder
Garlic cloves
Salt
Bacon

Put the pork butt in the crock pot. Tuck the garlic cloves into and around the meat. Salt it and place 3 or 4 bacon slices over the top.  That’s it.  Don’t add liquid.  Turn it on Low for 14-16 hours.  Don’t mess with it.  Trust me on this.  The bacon gives an amazing smoke flavor to the roast.  When it’s done, take the roast out of the juice before pulling it apart.  (the juice it too salty).

Avocado Mango Salsa
1 Mango
2 Avocados
Juice of 2 limes
1 tomato
Cilantro

Chop everything up, mix it all together and let the juices start lovin’ on each other.

Bibb or butter lettuce leaves

Put some delicious smoky pork in the middle of a lettuce leaf, add a little mango salsa and some hot sauce if you like.  Yum.

I took this to a Super Bowl party and I had to fight people off so that I could take some leftovers home with me.
