Spring LEANing Lecture Followup

I want to start by thanking everyone who attended the Paleo lecture this morning.  I am really looking forward to seeing each of your progress over the next few weeks.

Beth and I were talking after the lecture and realized that we hadn’t talked about a VERY important subject, water.  It is very important that we keep ourselves well hydrated to make your new diet and lifestyle work optimally.  Water is the only truly Paleo liquid (we give coffee the A-OK) and we need to be drinking it throughout the day.  I highly recommend that when you first wake up in the morning, try to drink at least 16oz. of water before you do anything else (weather you know it or not, you sweat while sleeping, you need to replace this water ASAP).  Keep this up throughout the day by carrying a water bottle with you to remind you to keep drinking up.

To help you to remember to keep drinking up, we have a free Wine Country CrossFit water bottle for everyone who came today.  Please just ask us at your next class.

I almost forgot!  How could I post today and not pass along a fantastic Paleo recipe?

This recipe comes to us from Beth’s good friend Dave Parsons.  A big thanks to Dave for sending us lots of great recipes and fantastic photography of the dishes.

Cow and Shrimp Saute:


SIMPLE AND FAST WITH ENOUGH “STUFF” TO SATISFY. A ONE PAN MEAL THAT DOES IT!

INGREDIENTS-
1/2 LB-STEAK OR OTHER MEAT CUT INTO STRIPS.
1/2 LB- RAW SHRIMP
1- BUNCH OR BROCCOLI
1/2 LB- OF CARROTS…any shape will do.
GARLIC…MINCED OR CHUNKS..or not. Some of can never get enough of that stuff.
A HANDFUL OF MACADAMIA-CASHEW OR ANY NUTS. You can add seeds and stuff to fill in the little spaces if you would like more stuff to chew on. The picture has minced walnuts in it.
SOME COCONUT OIL.
SOME  UNSWEETENED COCONUT SHREDS.

FIRE UP THE PAN!!.nice and hot so the meat crisps up outside quick.
GET IT HOT!
SEAR THE MEAT AND SHRIMP IN A LITTLE COCONUT OIL UNTIL IT HAS A NICE BRANDED OUTSIDE. DON’T OVER COOK IT! Seared is outside done..inside not yet!
SET IT ON A PLATE TO THE SIDE.
PUT THE VEGGIE’S IN THE PAN WITH A LITTLE WATER AND THE LID ON TO STEAM FOR A MINUTE OR TWO….NOT TO MUCH..crunchy is still good!
SET THEM ASIDE ALSO.

NOW WE PUT IT TOGETHER
BACK TO THE FIRE WE GO….GET THAT PAN REAL HOT AGAIN..THE HOTTER THE BETTER TO CARRY THE HEAT TO THE FINISH.
ADD SOME COCONUT OIL TO THE PAN..JUST A LITTLE BIT TO MAKE IT ALL SLIP.
ADD THE NUTS AND SEEDS AND TOSS A FEW TIMES TO GET EM HOT AND PAN ROASTING
AND THEN TOSS IN ALL THE REST OF THE STUFF AND TOSS AND TURN IT TO GET IT NICE AND HOT…TOSS ON THE COCONUT SHREDS AND STIR THEM IN.

AFTER IT COOLS A BIT YOU CAN EVEN DO MY FAVORITE…
PUT SOME IN ONE OF THOSE ROMAIN LEAVES. AND TAKE IT WITH YOU…
